  • Homemade Labneh after straining

    Still quite soft even after 9 hours hanging – strong enough to freestand but not crumbly, this one is soft and spreadable; I’ve strained it for up to 24 hours before now and it can get to a dry, almost powdery quality, so there’s a balance to be struck. Drained-off whey in the 2nd picture.
