LOL! I am on day 2 of my roast chicken, having had leftovers with chips, and will make chicken rice soup tomorrow, or maybe winter mellon soup with chicken. Sometimes I can get 4 days out of 1 chicken.
That’s pretty much what we do. One bird = Sunday dinner for 4, then some in sandwiches for my lunch the next day, and the rest goes to make a risotto for 4 (including making a stock from the bones for the risotto).
