Eileen’s Baked Apple Recipe

  • lg handful chopped dates
  • lg handful chopped dried apricots
  • spoon sticky honey
  • small splash water

warm-through the above mixture (low heat) in a small saucepan until goopy and thoroughly mixed, and some of the water has evaporated off

de-core 2+ cooking apples and score them equatorially with a knife tip

stuff the hollow apple cores with the mixture above

place apples in a smallish ceramic dish, add a splash of water in the base to provide steam/humidity.

cook at 200C until apple starts to leak from the scored equatorial line

  1. But where do you find real cooking apples these days? You know, big Bramleys so dense and tart that you can’t eat them unless they’re thoroughly cooked. I’ve never seen them in the US, and on recent trips back to the UK I’ve been equally disappointed…..

    1. I’m lucky that my neighbour has ballerina-cut trees, one of which is awfully like a bramley; actual bramleys are harder to find because they look like shit, but it is possible if you check-out farmers markets rather than supermarkets.

      One green tart apple with a waxy skin that is often overlooked as a “cooker” is the Granny Smith; they’re pretty easy to get ahold of, just wash them carefully. 🙂
