As a further side comment, the iron in haemoglobin is in a +3 oxidation state. The iron in spinach is in a +2 oxidation state. Therefore, while spinach is good for you in other ways, the fact that it is a significant source of iron doesn’t actually help its case much :-).

Your body can process the iron from spinach when it’s processing iron from (say) steak, but not when it is just processing spinach alone…
