I was up at 5:20 this morning and had a slice of Gruyere and broccoli quiche. Made pancakes on Sunday – actually, the kids did. This sort of recipe is ideal for kids.
I quite like mine with a fine marmalade 🙂

I find that they can be made even simpler: Put one plantain + 4 eggs + 1 teaspoon baking powder + 2 tablespoons water into a blender, blend until smooth. Makes 4 pancakes and use plenty of butter/coconut oil per pancake.
